    My understanding is that nitrates (including from natural sources such as celery) interact with certain components in red meat (haem iron, amines and amides), they form N-nitroso compounds, which cause cancer. The best known of these compounds is nitrosamine. Organic bacon, organic wine, and organic cigarettes are all marketed as being safer; but I don’t think the cancer council would say there is any difference.
